Sheer Khurma

Sheer Khurma is a special rich and creamy dessert which is perfect for any special occasion. It is a kind of vermicelli pudding cooked in milk and dry fruits. Saffron threads are added to give a distinctive aroma and flavour. Dates are an important part of this dessert that's why it's called sheer khurma means milk and dates. Traditionally this dessert is prepared for Eid festivities and is enjoyed by the guests throughout the day.
Ingredients:
- 1 tablespoon ghee
- 1 cup thin vermicelli
- 1 litre whole milk
- 1 cup sugar
- 1 pinch saffron
- 1 Tablespoon crushed pistachios
- 4-5 Cardamom pods
- 1 tbsp raisins
- 1 tablespoon Almonds flakes
- 1/4 cup Cashews
- 5-6 pitted dates
- 3 tbsp heavy or double cream - optional
Method:
1- First to make date puree take 3 medium pitted dates and add boiling water in them. Puree the dates in a food processor and set aside to use later.
2- Add 1 litre whole milk in a separate pan. Add 4 - 5 cardamom pods and bring the milk to boil. You can add saffron strands in the milk at this point if you like deep saffron flavouring and colour. Let the milk simmer for a while. Adding saffron is optional.
3-Heat ghee in a pan, add all dry fruits and roast them until they are golden brown. Now add vermicelli and fry till slightly browned.
4- Once milk comes to boil add roasted vermicelli and dry nuts. Cook on medium heat for 8-10 minutes until the milk is slightly thickened then add sugar. Let it cook 3-4 minutes on low heat.
5-Turn the flame on low and add 3 tablespoon heavy or double cream (they are same).
6- I take the cardamom pods out at this point as they are very strong flavoured if you happen to bite into one, but it is totally your choice.
7- Stir in the dates puree and once desired consistency is reached turn the heat off. Add sliced dates. Garnish with pistachios and saffron threads. Sheer Khurma is ready to be served warm or chilled.
Sheer Khurma can be refrigerated for up to 2-3 days. Reheat in microwave or stovetop. Do not reheat more than once.
Sheer Khurma thickens as it cools down, you can add more milk as needed or before serving.
